Low Carb: The One Minute Muffin

The Low Carb One Minute Muffin

One of my quick and easy snacks :eat:


1/4 cup Flax Meal

1/2 teaspoon Baking Powder

1 packet of Splenda

1 teaspoon Cinnamon

1 egg

1-2 teaspoons butter

Total Carbs: 1.5

Mix the dry ingredients together in a large coffee cup. Add egg and butter, mix well (you may want to melt the butter for 15 seconds in the microwave first). Microwave for 50 to 60 seconds. Turn mug over and muffin pops right out.

This sounds great Bob. I'd really like to try this recipe' date=' but I've never heard of flax meal. Is it a type of flour?[/quote'] Made from flax seeds. Make sure you don't get flax seeds though. You want this...

It's called Linseed in this country because the plant used to be used to make linen. People in the Bible worked with it, eg:- Rahab and Lydia.

The seeds are very healthy eating, full of anti-oxidants, high in Omega-3, prebiotics and lignans. Its, better known in the UK as a bulk fibre food to aid digestion, so you tend to see the seeds in bags/boxes Health Food Shops. British folk, who can't get it as ground meal at supermarkets here, tend to get bags of seeds at Health Food shops and grind what they need each day in a coffee grinder. Keep the opened packets in the fridge, as they go rancid quicker at room temperature. Sainsbury's is the only supermarket I have seen the ready ground meal sold and it is ridiculously expensive, so it's cheaper to buy the seeds at our Health food store and grind myself in my coffee/nut grinder/blender.

Hey D_Bliss did you find this on Dr. Oz? I saw this recipe yesterday on his show, with some differences:

1/4 C ground flax

tsp of baking powder

2 tsp of cinnamon

egg

packet of stevia

tsp of Coconut Oil ( which I only use for cooking and as a moisturizer and on my hair and as a deodorant and as a sunscreen, etc)

I also love whey and use it when I have long days in the Ministry as it keeps me full and balanced. My favorite is the delicious oatmeal pancake:

scoop of whey (I love vanilla or strawberry for the pancakes and chocolate as a snack)

cup of raw oats

3 egg whites

1/4 cup water

1 1/2 tsp cinnamon

1 1/2 tsp baking powder 2 packets sweetener

Mix all ingredients in a blender or until smooth and then prepare like regular pancakes. You will not notice the difference. I cheat and have honey or sugar-free syrup or even BSM that the Brothers say is good for anemia.

The only real difference is the choice of coconut oil over butter. But no, I have been making one minute muffins long before there was a "Dr. Oz". I am from the Atkins era (the 90's one, not the 70's one). I have a whole slew of low card recipes that make you feel like you're living like a king! :)

I have a bun recipe too I ought to post.

This low carb muffin can be modifed too. I think it is called "Wheat Gluten" which is a protein and comes in the same kind of bags that I posted above (Bob's Red Mill). You can mix the gluten and the flax together to modifiy the texture and consistency of them.

After too many breaks at McDonald's, I'm also low carbing. I'm eating one of the muffins right now - they're awesome! Thanks for sharing and, if you have any other fab low carb recipes, I would love to see them. Thanks again! :rockon:

Bob make a few healthy changes; get rid of the chemicals such as Splenda that hurt your organs and use honey or Agave Syrup. Don't ever if at all possible use a microwave ~ it's a killing machine literally. Convection oven would be better if at all possible...may take a few more minutes but you could shower & get ready than the muffin would be awaiting you :)

Oh! This sounds like the mug muffin. Instead of flax meal, I used oatmeal. Yummy stuff! I won't use fake sweetener. Honey is my go to, and with a bit of experiment, it is delicious.

On a low-carb diet, you find out how easily we can get along without refined flours and sugar (which is the point). My wife makes these and we're usually eating them for a few days.

 

Low Carb Muffins

1 cup flax seed meal

1 cup almond flour (another godsend for low-carbing)

1 tablespoon baking powder

1/4 teaspoon salt

2 teaspoons cinnamon

1 cup Splenda

1/2 cup butter (melted)

4 eggs (beaten)

1/2 cup water

Mix and pour into muffin (cupcake-sized) pan, bake for 20 minutes at 375 degrees. Makes 12 muffins.

They're great! They come out to around 3 carbs per muffin.

 

The wife adds a little vanilla sometimes and some bittersweet chocolate chips when we really want to splurge. :D You could use another, natural sweatner like stevia, xylitol or erythritol, but we've never had aproblem with sucralose (Splenda).
