Cabbage Roll Soup

If you like cabbage rolls you will enjoy the flavor of this soup. I think the soup is alot better than actual cabbage rolls and way much eaiser to fix.

It was cold and misty today and I fixed a big pot of this soup and served with cornbread muffins. So comfy and good!

Brown 2 lbs of lean hamburger with a chopped onion. If any fat, drain. I put this in a crock pot then added

1 chopped bell pepper

1 cup shredded carrots

1 cup chopped celery

1 bag cole slaw

1 c raw rice

1 can rol tel tomatoes and green chilies

32 oz box beef broth

1 can diced tomatoeswith juice

1 T brown sugar (or honey or white sugar)

Paparika, basil, oregano. ground black pepper, and pinch of ground nutmeg

Cook on low for 3-4 hours. If your lid is tight fitting you may not need to add water but the rice will absorb alot quickly. Just add more water or tomato juice to make it juicy.

Sounds great. I love cabbage rolls.

On Sundays we have the meeting in the late afternoon, so I always make sure to put something in the slow cooker.

That way we have dinner ready when we come home.

Cold weather is here for this region, so I'm longing to try something new and this sounds delicious Leslie.  Yesterday evening I made for the first time some cabbage rolls based on a eurocentric recipe I found online.  Unfortunately, there was no "wow" factor for me and I was disappointed.  (I need to get back to my Southern roots and find a better recipe...lol).
