Butternut Squash Roasted Garlic and Tomato Salsa

Oh my goodness, this looks great!

 

This is how you make this Roasted Butternut Squash Chipotle Salsa:

Preheat the oven to 400 degrees. On a sheet pan, toss the butternut squash, tomatoes and garlic with the oil.

Roast for 30 minutes at 400 degrees.

Transfer to the bowl of a food processor and add 1 cup fresh cilantro, the juice of 1 lime and 1-2 tablespoons of chipotle and sauce (depending on how spicy you like it).
Pulse until you have a thick salsa and then transfer it to a serving bowl. Serve with tortilla chips and enjoy!

Recipe: Roasted Butternut Squash Chipotle Salsa
Ingredients
  • 2 cups butternut squash, peeled and cut into large chunks
  • 1 pound cherry tomatoes
  • 3 cloves garlic
  • 1 tablespoon vegetable oil
  • 1-2 tablespoons chipotle in adobo sauce (canned)
  • 1 cup cilantro
  • 1 lime, juiced
  • kosher salt to taste
Instructions
  1. Preheat the oven to 400 degrees.
  2. On a sheet pan, toss the butternut squash, tomatoes and garlic with the oil and roast for 30 minutes at 400 degrees.
  3. Transfer to the bowl of a food processor and add 1 cup fresh cilantro, the juice of 1 lime and 1-2 tablespoons of chipotle and sauce (depending on how spicy you like it).
  4. Pulse until you have a thick salsa and then transfer it to a serving bowl. Serve with tortilla chips and enjoy!
