Potatoe Leak Soup

3 or 4 large size potatoe's, 2 medium size carrots, 2 leaks

 

peel potatoes, wash and cut by 4 pieces.

 

was carrots, peel, cut into 1 inch size

 

cut up leak's, into 1 inch cuttings, put in water (sink or bowl) to get sand out. 

 

have a pot (half size) not to deep, add 1/2 amount of water into the pot.  Start to cook at medium/high heat.  Add potatoes, carrots and leaks.  Stirring every so often.

 

cook till you can put a knife or fork into the potatoes. 

 

stop the cooking, and hopefully some in here have a blender or kitchen aid blender or something like it.  (Make sure your blender will not crack with hot liquid or food in it)

 

scoop up potatoes, cut up carrots and leaks into the blender.  Add some water, so it will not be to thick.

 

grind or whip up the ingredients all together.  If it looks to thick, add water from the pot you cook the three ingredients.

 

Do not make it to runny.

 

pour what you have in the blender or kitchen aid into a separate bowl.  Stir it.

 

continue process till the pot is empty of the potatoes, carrots and leaks.  Left over water preserve in another container. 

 

grind or whip up smooth, and pour what is left into bowl. 

 

Stir with a whisk.

 

Same pot, now with no more water in it, pour in the creamy soup, if it looks to THICK, add some of the water to it. Set to low/medium heat. 

 

Just for starters, you can add 3 bouillon chicken cubes.  Stir with the whisk.  Taste it.  If not enough bouillon, then add another one, don't over kill it with bouillon. Taste it after stirring.    If it looks to thick, then add a little more water.  Do not over water it.  You want it creamy. 

 

then when you get to the point where you think you like the taste, you add 1 small pint of heavy whipping cream carton (not can).  Pour into the soupy mixture.  Whisk it (stir) taste to see if it is okay with your taste buds.  

 

This is good to eat and it can last in frig for 1 week.  Do not add any salt, or pepper.  If you add onions, it may taste more like onion then leak, potato and carrot soup.

the only difference I do , is I add some bacon, I just fry it up drain the grease and chop in small bits, throw it in soup, I do put it in the blender with everything else nummy
