Low Carb Peanut Butter Cookies

1C. Peanut Butter

1C. Splenda

1 Egg

mix together, drop by spoonfuls onto baking sheet, bake about 10 - 12 minutes

Peter Pan crunchy peanut butter has the least amount of carbs that I have found. These end of being like 1.5 - 2 Carbs each,

depending on which peanut butter you use!

I love peanut butter cookies. I make my own peanut butter low carb protein shakes once in awhile instead of going to get the sugary fatty one at the local ice cream place.

That is 1 Cup of the pourable Splenda, in the bag, it measures the same as Sugar. If you use the packets, each packet is equal to 3 teaspoons of sugar, so you would use approx. 16 packets, if my math is right! 16 tablespoons equal 1 Cup, 3 teaspoons equal 1 tablespoon, so 3x16= 48 tablespoons, each packet = 3teaspoons, so 48 divided by 3 = 16 packets.

My kids would make these then press a Hershey's kiss down in the center when they came ou of the hot oven. Scrumptious!
