Love sweet potatoes Usually l buy the smaller ones Love to scrub them and rub them with olive oil bake them and eat them

Sometimes I'll slice them on cookie sheet sprinkle a little cinnamon bake them till crispy

We have a type of sweet potato here in NZ - well call it Kumera ... it has a yellow not orange flesh. Not sure if its the same as your sweet potato.

 

Traditionally it's cooked in a Hangi (food cooked four-five feet underground in baskets on hot stones). But usually a lovely accompaniment to the family roast.

 

However, I have had this recipe of just boiling the kumera in orange juice. It actually compliments it lovely. I really like it.
