Spicy Tomato Chutney

I make this for work and girls night.  It is so easy to do and an excellent appetizer or finger food.  It is also good on eggs, or as a condiment for sandwiches. 

 

Take approx. 6 cups of grape tomatoes or the plastic tub of small tomato that are varied in size and colors.  I just love those. 

! Cup of chopped Vidalia onion or Maui Sweet onion

1 cup raisins (don't overlook these if you think you don't like them)

1/3 c brown sugar

1/3 c apple cider vinegar

1/2 tsp of red pepper flakes

1/4 tsp salt

1/4 tsp coriander

2 tsp of minced garlic

1/2 tsp black pepper

1/4 c water

 

Spray a slow cooker with cooking spray and add all of the above.  Cover and cook on low for 6 hrs.  Uncover and take a potato masher and gently mask tomato leaving in big pieces.  Keep lid off and turn cooker to high and cook another two hours till it is thick and the aroma is driving you crazy.  I put this in mason jars for keeping and serving.  I also give this as an unconventional gift which has been enjoyed by others.  You can also put this on vanilla ice cream, or cream cheese and crackers or cottage cheese.. It is so good you will find ways to use it.
