Potato and Sausage Soup

Dice one onion and 4 stalks of celery then saute in a tsp of olive oil with a 1# package of Jimmy Dean breakfast sausage. Wash and chop potatoes --about 6 large potatoes-in a pot of boiling water that has been seasoned with chicken bullion. Boil the potatoes till soft then add 1 cup of heavy cream and 1/2 stick of butter. Take 1/4 C of Wondra flour and stir it into the skillet containing the sausage. Cook the flour mixture for 2-3 minutes then add a can of Rol Tel tomatoes and green chilies. Stir this into your pot of potatoes. Simmer about 15-20 minutes. I add Velveeta cheese if I have any on hand. If you like it thicker stir in some instant potato flakes to desired consistency. This is a very heart soup that freezes well. Enjoy!
