Low Carb recipes?

Lately I've been neglecting my otherwise consistent low carb diet, so now I want to get back to being more self-disciplined about this. Unfortunately, I'm not very creative when it comes to cooking. To be completely honest: I hate cooking. But it's unavoidable if I want to stick to my healthy diet. Do any of you know any quick and easy low carb recipes that I could cook without too much hassle?

Evening Christina, I am on a Ketogenic / Carnivore diet due to being diagnosed with diabetes early last year and want to put it into remission rather than managing it.

 

Therefore, I eat a lot of cheesy omelettes, bacon, eggs, meat etc along with green vegetables i.e broccoli and French Beans etc. I also like marinading Chicken to eat with salad.

 

I cut out pasta, rice, bread, potatoes and other high starchy vegetables in addition to seed oils and cook only with animals fats, butter and olive oil.

 

One soup that I enjoy making is Leek and Celeriac (replaced the famous potato version).

 

I found that I had been eating too little protein and was always snacking to fill the ensuing hunger. In the attached receipes, I double up the chicken breasts, omit the flour, rice, pasta, potatoes etc and eat with French Beans.
