Oven Fried Eggplant

I was just given 4 large eggplants....so this will be dinner tonight,with pasta sauce....anyone have other eggplant recipes they like?

Oven Fried Eggplant

Servings:

4 Servings Size

1/2 cup mayonnaise

1 tablespoon minced onion

1 lb unpeeled eggplant, sliced-about 12 (1/2 inch slices)

1/3 cup fine dry breadcrumb

1/3 cup grated parmesan cheese

1/2 teaspoon dried Italian seasoning

vegetable oil cooking spray Directions:

Combine first 2 ingredients, stir well.

Spread evenly over both sides of eggplant slices.

Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl; dredge eggplant in breadcrumbs mixture.

Place eggplant on a baking sheet coated with cooking spray.

Bake@ 425 degrees for 12 minutes.

Turn eggplant over; and bake an additional 12 minutes or until golden.

This was an awesome recipe I think you can make it with zuchinni or green tomatoes to. I put mozarella cheese on it.

That sounds yummo.

A friend he is Italian, He made Eggplant parmigana. Which is I suppose similar with the ingredients you have. But make a becahamel sauce instead of the mayo. And add parmissane cheese. as well.

Also another friend she is Egyptian she Makes Mousaka. With the eggplant. Its the same process to making a lagasane. Just include the sliced eggplants, but leave out the pasta sheets.

Nancy I remembered a dip you can make out of Egg plants

Babaganoush.

You roast the eggplant til soft. Scrape out all the soft innards.

.Blend with some tahini and lemon juice, olive oil, garlic. pepper & salt to taste

add some parsley and the green Ecshallots,

whizz it all up in your processor.

Enjoy it with avocado and hummus and falafels etc.
