Bread making and gluten free too

I have been working on my bread making skills so I can depend less on store bought stuff. The pic is my 15th loaves and I think I'm ok with making it now. Use Organic- wheat/white flour, golden flax, brown flax, ground sprouts, molasses, sunflower seeds and bacon grease. It's wonderful. But some of the fellas I cook for have become really intolerant of gluten so I'm trying my hand at spelt bread. I have this link I found: http://www.thebreadkitchen.com/recipes/no-knead-spelt-bread-recipe/ and I really like her, the accent is a kick! She's so smooth in her delivery too. So tomorrow I'm going to make spelt bread for Br. Glenn, he's so excited, he just loves ham sandwiches.

Has anyone done spelt bread or other low or no gluten breads?

Oh wow it looks like I faked the background, but I didn't. This is really the counter, I have to keep fresh stuff for bro's and grand girl.

Great pics!  Wish I could help out but all of my recipes include regular gluten flour.

 

Have you tried adapting a known recipe and replacing with spelt?  I've read a few ideas on how to convert recipes to suit your needs.

I prefer my breads with nice hearty gluten's, but I do know some can't have them so I have used this recipe for gluten free scones. They come out great. Of course I am at high altitude so yours may come out differently.

He's avoiding it because he needs to lose weight, he's well over 70 and his knees and hips are tired. It only seems to bother him when he over-consumes bread, which he can.  

I thought spelt was gluten free, sad. (But the spelt bread does look good on the bread video doesn't it). Maybe with less gluten it'll be more digestible where he can have a sandwich and not feel bloated.

Annie, does hubby eat GF bread? I hear it's not very good. IDK, I never ate it.

I wish I knew how to convert a recipe to no gluten but the ingredients are so different and specific that I think a regular gluten free bread recipe should be followed by those who need to really have GF. I'm really not much of a baker so doing a true GF bread might be over the top for my skills. For today anyway.

Yes everything is gluten free my cooking has gone downhill big time ! He tried spelt and it made him very ill. .He gets a anaphylaxis reaction to gluten we have to be very careful, his lips even swell and tingle.

I have seen at the store "gluten free flour" and some even say bread flour or brown bread flour may be. Have you tried it?

Yes I've tried all kinds of gluten free flour but you really don't get the same result

Some Gluten Free Breads I have tried.  Not close to traditional bread but they can be used to make sandwiches.  They are made of Nuts so anyone with a nut allergy wouldn't want to use it. 

 

NOTE: I use Cashew Flour instead of Almond Flour as it has a milder taste. You just substitute the same amount of Cashew Flour.

(I sometime substitute the Coconut Oil for Olive Oil since I don't want too much of a coconut taste to the bread)

I double the amount of honey asked for in the recipe.  Since the dough is a bit loser than regular bread dough I purchased a

whoopie pie pan and spoon a bit in each cavity and pan it with one finger to spread it out.  So I get more biscuits than the recipe calls for.  In addition to biscuit I use the bread as buns for hamburgers.

 

I also use this recipe to make mini hot dog buns.  I just use a twinkie pan and fill each cavity 1/2 way high.  They rise and I cut them into and put 1/2 a hot dog inside.

I have not tried this one yet.  I found it a few days ago and was excited it didn't use coconut flour.  I don't like how coconut flour overshadow the taste of some recipes.  This one doesn't use it.  I plain to make it sometime this week.  I will try it first as written.  Then I will switch out the almond flour and use cashew flour.

 

I'm not sure about carbs as I don't count carbs but it does help me enjoy sandwiches, burgers, etc.

 

Maybe one of these will work for you.

I have an amazing recipe for breakfast bars. To keep your energy up stash some in the freezer and pull them out on a morning your spending a day in service.

1 cup any type of flour ( gluten-free blend) or multi-grain

2 cups Old fashioned Oats

1/2 cup flax seed

!/2 chia seed

1 1/2 tsp. baking soda

3/4 tsp. salt

5 tsp. an assortment of allspice, cinnamon and ginger

2 eggs

1/3 cup coconut oil

1 1/4 cups unsweetened applesauce ( this is where I get creative - I blend up frozen berries and have even mixed in cooked pureed squash - anything works )

1 cup coconut palm sugar ( so no huge sugar spikes )

1 Tbsp grated orange rind

2 tsp vanilla

3/4 chopped nuts

1/2 cup sunflower seeds

1 cup dried fruit ( I have been using a berry blend from Costco that has some pumpkin seeds etc. in it as well )

Is. 41:10 " I will fortify you. I will really help you. I will really keep fast hold of you with my right hand of righteousness. "

Oh my goodness this is great. TY! It's an alternative I can try for Glenn. 

I know a young sister with celiac disease and she has to be so careful. She's adapted well and has changed the way she eats, doing sandwiches does not exist in her world, now in her new husbands world either. He has actually benefitted from her eating. He had real bad acne, now that young man looks beautiful, and healthy!! So maybe there's something to eating no gluten??? Hmmm. 

Well I don't know, it'd be hard to do.

Sorry if this sounds like a silly question but I really do not have an idea...what do you do with the ingredients?

I blend the dried fruit and then mix everything together and bake at 350 ... 25 min . You can play with this recipe to suit your taste, I even grate a zucchini in sometimes

Just made it and waiting for it to bake :)

It is a lot of good things going in there... I had to swap the palm sugar for honey and diminished the amount of ingredients because there is only me to feed but it is still enough to share at work and for some sisters at the Hall. It smells really good. This is my first time having chia, allspice too by the way. Will have this for breakfast tomorrow!!! Thanks again. Would recommend this to anyone as it is easy to make, and is full of nutrients. Taste good...at least raw. Need it to bake. :)
