Slow Cooker Balsalmic Onions

Again, this is a wonderful condiment with so many great uses.  I am still finding out ways to use them.  My friends tell me the way they have enjoyed them to and I have to say they are pretty creative.  Tender onions in a sweet and savory syrup are a perfect compliment for roasted meats, sandwiches, and cheese and crackers.  If you have a mandolin slice 6 large sweet--Vidalia or Maui--onions and two purple onions and place in a slow cooker that hass been treated with a spray oil.  Add 1/2 cup of molasses amd 1/2 c Balsalmic vinegar, 1 tsp of thyme, 1/2 tsp of grated fresh lemon zest, 1/2 tsp salt, 1/2 tsp black pepper.  Cover and cook on low setting for 8 hrs then remove lid and stir gently and cook on high an additional 2 hrs.  Place in mason jars and store in frig.  This is another wonderful thing to have on hand that really elevates sandwiches and such.  also give a jar to a friend.

I was just looking at recipes for pickled onions and came across the one with balsamic like you mentioned. It looks really good. And it is real versatile, be good on most anything. 

Garden giving enough cuc's to make bread and butter pickles. BUT I like to make it with lots more thick cut onion, the mustard seed and turmeric, vinegar and sugar are so great, the onions in it is so good I'll stand at the sink and eat out of the jar!

I miss being able to eat vinegar.  After all the chemo years back I have not been able to tolerate vinegar, mustard, sour cocktail, lemon and lime.  I immediately feel a horrible burn sensation then upchuck IMMEDIATELY!  I can not even get to a bathroom or sink.  It is very strange because it comes up selfcontaied in a slime sack.  I know too much information.  But I am a nurse and I never see emesis like this.  I just can't figure out why.  Sharon?
