Mini Pumpkin Corndogs

Sunday evening I had a few friends bring the kids over and we made the mini pumpkin corn dogs.  They were so delicious!  These would be ideal for game day foods, worship night or game night.  Or just and movie and snack. 


I took a box of Jiffy cirnbread mix and stirred in 1 egg, 2 T sugar, and 1/2 cup of pumpkin plus enough milk (maybe 1/2 or little more of milk).  Take a package of little smokies and dust lightly with corn starch.  Bring vegetable oil to 350 degrees while you are making the dogs.  Drop the cornstarch dusted little smokies in the thick batter and coat well.  Add gently to cooking oil and turn the dogs while frying.  It took about one minute to 90 seconds to fry a batch.  Drain on paper towels.  This batter was the best corndog batter ever.  Then we mixed whole grain mustard (brown variety) with maple syrup and used as a dipping sauce.  The whole meal prep from start to finish less than 15minutes.  We also took the straight pretzel sticks (about 2.5 inches in length) and used them as the handles for the corn-dogs.  We did this after the little corn dogs had drained about 30 seconds on a paper towel.
