Indeed. Jehovah is the one who made that law for the ancient Israelites however, and surely He had a very good reason behind it. No human would have known about the mercury or arsenic or other things in shark meat back then, but Jehovah always knew.

Yes, very good reasons indeed, but the prohibition on shark meat (if you really should put it in the category of scaleless fish at all) was a dietary restriction, but not primarily a health law.
