Spaghetti Recipes

Hi! I saw Sonny Bono give his recipe for uncooked spaghetti sauce on tv probably 15 years ago. It's one of my faves.

Fresh Tomato Sauce

3 large ripe tomatoes, blanched, peeled, and diced

1 clove garlic, minced

1 small mild onion, minced (or to taste)

8 large basil leaves or 1 tsp. dried

1 Tblsp. finely chopped fresh oregano or 1/2 tsp. dried

1 tsp. finely chopped fresh rosemary or 1/2 tsp. dried

salt and pepper to taste.

1/2 cup olive oil

juice from 1 lemon or lime, strained

Combine all ingredients, put in a glass bowl, cover, and let sit in the sun for 3 hours. (I usually just keep it inside, but it does need to sit for 3 hours for the flavors to develop.

Do not cook. For 1 pound pasta. Top with parmesan or romano cheese.

Confetti Spaghetti

1 pkg (12 oz) spaghetti

1 1/2 pounds ground beef

1 med. green pepper,chopped

1 medium onion,chopped

1 can(141/2 oz) diced tomatoes,undrained

1 can (8 oz) tomato sauce

1 T. brown sugar

1 t. salt

1 t. chili powder

1/2 t. black pepper

1/4 t. garlic powder

1/8 t. cayenne powder

3/4 cup shredded cheddar cheese

Cook spaghetti according to pkg directions,drain

Meanwhile in a large skillet,cook the beef,gr.pepper and onion,until brown and drain.Stir in all remaining ingredients except cheese.

Add the drained spaghetti and mix well.Put into a greased 13 by 9 inch pan,cover and bake for 30 minuits at 350*.Uncover and sprinkle on cheese bake 5 minuits more.

Makes 12 servings.
