Invited a couple of friends over for our belated 18th Anniversary. ( Was on Dec 2 )

 

I made a one pan salmon with roasted potatoes and asparagus. Garlic & herb blend, salt & pepper, butter.

 

Didn't quite follow the recipe - used cut up russets and cut up sweet potatoes ( called for baby spuds cut in 2 ).

 

Fish was done to perfection - spuds and asparagus still adente ( my wife likes mush - I mean very well done. ) delish.

 

I surprised her by giving her a 6 quart Instant Pot ( hmmm  maybe it twaz fur moi since Ah duze most of the cookin' now )

 

She loves it. 😍
