Red Beans and Rice

I know how my mom makes it. She cuts up some onions, and I believe she smothers them a bit in oil, then adds the beans in water, then cooks it on a relatively low heat, adding garlic powder/salt, onion powder, celery salt, a little bit of thyme and salt and pepper; I usually add a bayleaf.

My mom and I prefer polska kielbasa in our beans, but different people have different preferences, and my aunt puts salt meat and adds some sausages (kinda like thick pork sausages mixed with onion)

 

But yeah good that your soaking them. We usually soak them for a while before cooking and remove the bad beans.

 

Trust me, I'm a New Orleans girl 😉
