Soup, Keto and non-keto

Found a keto soup recipe for today- cheesy, broccoli with bacon bits (my addition). The recipe is on Pinterest and boy I have to say it's amazing. So good. Definitely will make it again. 

 

I imagine it could be done with cauliflower or other veg.

Also if you keep out the broccoli, sear some boneless chicken thighs or pork medallions then add the sauce its remarkable. Yessiree, a keeper.

 

Tell me your favorite/special recipe.  I'd love to hear it

1/2 cup Onion                                  3 cups canned Chicken broth

 
 

1 tsp Pepper                                     1 tsp Salt

1 tsp Xanthan gum                          8 tbsp Butter

 

16 oz Cheddar cheese                    1 cup Heavy whipping cream

Yup, awesome. 

So last night I did warm leftover soup and browned up the pork medallions. Put together, it was marvelous, going to have for midmorning today too.

How can anyone not love soup??

That looks super good. I'm gonna try it.

Here's a keto cream of chicken soup, that I put together the other day (with improvements)

The measurements are guesstimations:

1/2 cup of onions

A few broccoli florets 

Chicken breast or whatever your preference is.

About a cup of chicken broth

Teaspoon Xanthan gum

Cup of whipping cream.

Garlic salt/powder.

Salt/pepper.

 

So, you start by smothering the onions and add the Xanthan gum. Then add chicken and broth, until the chicken is fully cooked, then add the whipping cream.

Dice broccoli in a food processor and add to the soup, then season with the above seasonings or whatever you prefer. And that's about it. It's pretty simple, and I find pretty delicious.
