Italian Beef Sandwiches (Hot or Sweet)

I am preparing the menu for Sunday's football party at work. It makes for a wonderful meal that is delightful on all levels. It is very pretty, smells wonderful, and tastes out of this world! If you like Italian Beef Hoagies you will want to try this one next. It also makes a huge amount to share with the friends.

144212=7926-sandwich0113.jpg take your beef and season it well with the following: 1 T dried Italian Seasoning 2 teaspoons crushed red pepper flakes kosher salt and ground pepper pods to taste garlic powder Brown it well in a pot that is oven safe if possible. Otherwise you will need to transfer it to a oven safe pan for cooking. After the beef is well browned add 1 bottle of dark Beer (I used a Guinness Stout), 6 cups of beef broth, 1/3 cup of Worchestershire sauce, 1 tsp dried thyme, 2 tsp dried oreagano, 1 T Tobasco, and cover well. Place in oven at 400 for 1 hr then turn down to 300 degrees for 3-4 more hours. Make sure it is tightly sealed where there will be little evaporation. You want a lot of broth when it is finished. You can check it after you turn it down to 300 and add water if necessary to keep it about 5-6 cups of liquid. Make this a day ahead of any even and you will have a nice clean kitchen when you have company. Also the borth marries with the seasonings so well. Slice thinly with an electric knife or someone who has knife skills let them do it for you--says the three fingered chef. When ready to assemble the sandwiches heat the borth in a pot and add 3-4 bell peppers and 3-4 onions that you have already sauteed till tender crisp. Drop your thinly sliced meat in the broth/gravy to heat well. Brown your hoagie buns in a skillet and add your meat and onion mixture plus a couple slices of your cheese )provolone works well--but really what ever you like-- I am serving these with my bourbon baked beans and carmelized onion dip with a veggie and chips for dippers. If your foot ball fans--enjoy the game. If your food fans--enjoy the meal!
