wanted: recipe for lambs hearts

Recommended Posts

Has anyone a really simple recipe for using lambs hearts? :chef:

I have had diced ox hearts in a casserole, but the weather at the moment is too hot for that type of meal. :sunshine:

I want something light and summery but making use of the hearts.

Pigs hearts (diced) is also something I want a recipe for.

Thanks Gabe. I have found a recipe for them stuffed with sausagemeat - I may try that one. :eat:

My wife is going to visit family for a few days so it gives me an opportunity to try something that she would not eat. If I find a good recipe I'll post it here.

I ended up by trimming the fat from them and cutting them into thin strips. This also allowed me to remove the remains of arteries, valves etc. and just end up with the lean meat in strips. Then I soaked the strips for 2 hours in 2 cups of water and 1/4 cup of vinegar. Then dried them, coated them with seasoned flour and sauteed them. With potatoes and peas, and a little gravy, they were actually delicious, but I doubt that I would go to all the trouble of preparation again.
