Trout With Crisp Bacon Crust

I love fish, and this is one of my favourites:

Trout with crisp bacon crust


· 2 rashers streaky bacon

· 2 sprigs thyme

· 1 lemon , zested and cut into quarters

· 50g fresh breadcrumbs (about two slices)

· 4 rainbow trout fillets

· 2 tbsp olive oil

1. Heat oven to 220C/fan 200C/gas 7. Finely chop the bacon, then mix together with the thyme, lemon zest and breadcrumbs. Place the fish fillets in a lightly oiled baking dish, then sprinkle a quarter of the breadcrumb mixture over each fillet.

2. Arrange the lemon wedges around the fish and drizzle with the oil. Roast the fish for 8-10 mins until it is cooked through, flakes easily and the topping is golden.

3. Serve with steamed vegetables and boiled new potatoes.

It worked really well. I was able to find Large Rainbow trout for 8.99 a lb. Isn't that alot to pay for trout?

Glad you liked it, Luana. I'm not sure of prices in the USA, but an online shop ( in Wales) sells Rainbow Trout fillets at £8 for just over 1lb. so your price doesn't sound too bad to me.

My mum used to say: "If you enjoyed it, it wasn't expensive!"
