Pizza Quesadilla

Here's a variation to pizza that I like to put together from time to time because I like experimenting in the kitchen and what better thing to experiment with  but pizza.  I go to my favourite bakery for two pizza doughs. Roll them both out.  Add whatever veggies - so for this one I used chopped onions, peas and kale,. For the meat, I used breaded chicken cutlets and cut them up in strips. I covered it all over with grated sharp cheddar cheese and finally another layer of dough. It doesn't even need any extra spices but your welcome to experiment as you wish. Pop it in the oven for 30 mins to melt the cheese and keep everything together  and voila.  I bake most everything on parchment paper for easy of cleanup and no need to add oil to the pan .

Yup, no oil or sauce needed. If you want to brush the dough with  olive oil, sprinkle with salt and oregano, I'm sure that's an idea too.

 

 The peas are just plain little round peas. Yea, it seems strange but its whatever I had on hand.  What can I say? I like my veggies.
