“BBQ” (or “barbecue”) comes from the Spanish barbacoa, which itself is traced back to a Taíno word for a raised wooden framework used for cooking meat.

Barbecue isn’t a flavor—it’s a method.

The word doesn’t belong to a sauce or a spice rack; it belongs to the fire.

True BBQ means meat cooked slow and low, away from the flame,

where heat and smoke do the work instead of direct fire.

So whether you marinate with ketchup, vinegar, or peanut butter,

it’s not the sauce that makes it barbecue—it’s the patience. - GOW
