Low Carb Desserts

My secret is buy almond flour......lots and lots and lots of almond flour.
I found like a four pound bag of almond flour at walmart for about $12 and thought "YES! I'm taking this home!"

So, I might share a few of the recipes and see if anyone would want to do the same.
I just made a keto chocolate cheesecake.
I don't know how good it is yet. Will try it out tomorrow.
but I used for the crust:
a cup of almond flour,
cocoa powder ( half cup)

a half stick of butter melted with chocolate chips (sugar free) in the microwave
and a half cup of sugar substitute (I have stevia)

Then for the filling I mixed
A packet of cream cheese with
a bit of cocoa powder, (idk how much)
butter, the other half of the stick,

a half cup of sugar
an egg that's been vigorously whipped
and more of those chocolate chips.

Should be good, I'm thinking

I think sour cream will work
I'm not personally a fan of sour cream, so my desserts are typically sour cream free hehe

i think sugar free jello is carb free.

I think I'm gonna keep baking low carb even when I'm off keto, because almond flour is good, and it's so much more nutritious than wheat flour. I believe it even has more fiber than oatmeal.

Did you ever try adding an extra packet of plain gelatin to make sugar free gum drops? It's pretty good, but only worth it if you can find a bunch of sugar free jello packets in bulk on the cheap.

Bought Keto ice cream from Rouse's market. Chocolate. It was delicious!
I find Keto ice cream has a bit of a dryer texture compared to non keto, but it's not so bad. I really like and and would buy some more.
wish I had an ice cream, so I can make my own tbh.

Also made some keto blueberry muffins with almond flour. They were good as well.
Similar to this recipe, except butter instead of coconut oil
