Authentic Indian Chicken Curry Recipe

Indian Chicken curry recipe

 

Ingrediants 

1kg chicken, 2 meduim brown onions, 1 tablespoon garlic paste, 1 tablespoon ginger paste, 1/2 cup of full fat Greek yoghurt, 1 teaspoon salt, 1 teaspoon red chilli flakes, 1/2 teaspoon turmeric, 1/2 teaspoon garam masala, 1/2 teaspoon cumin powder, 1/2 teaspoon cumin seeds, 1 tablespoon coriander powder, 1/4 teaspoon black pepper, 1 teaspoon paprika, 1 tablespoon Almond powder

 

Method - chop onions finely and fry until golden brown, add garlic and ginger paste, fry and stir for 30 secs to a min until you can smell the aromas of the garlic and ginger, add chicken Cook on a meduim heat, keep stirring until water is released, once the pan is nearly dry reduce heat to low, add yoghurt and keep stirring to avoid it splitting, mix and add all the dry spices except Almond powder. Once the mix has reduced add 1/2 cup passata (sorry forgot this off the ingredients list). Keep stiring until it reduces again. Add 1 to 1.5 cups water and Almond powder and simmer on low to medium heat until the chicken is cooked and sauce has thickened (about 20 mins, may need a bit less/ longer). Add coriander and simmer for 5 mins. Then your done 😊

by almond powder do you mean almond flour?

and what is passata?

Passata is Tomato puree (or Tomato paste) you can make your own, but is is not an expensive item.
Not sure on the almond 'powder'. Down here we have almond flour (peeled blanced almonds) and almond 'meal' made with whole almonds (skin on).

It's just finely ground almonds. Same as almond flour I guess.
