Gluten-Free Carrot, Pecan, Ginger Cake

Use Pamela's Baking Mix which has almond and brown rice flour and baking powder already in the mix...or any flour that is gluten free....

Melt 1/2 cup of butter in 3 cups of milk of your choice and1/3rd cup oil(I use grapeseed oil)

Cool liquid till warm.

Pour liquid in bowl and add 4 beaten eggs, 2 cups fine turbinado sugar, ginger powder to taste(I use 2 heaping tbs.) and a dash of cinnamon, 1 cup finely ground carrots and 3/4 cups of ground pecans. Mix on medium speed adding flour mixture till right consistancy for a cake mix.

Pour into 3 oiled baking dishes, pans,'or large rectangular dish.

Bake at 375° until cakes rise and set, then turn oven down to 360°...total time 45min....tap cake...should feel solid...

Icing: couple of ounces of milk...2 tbs. butter and powdered sugar., ginger to taste...beat till smoothe

Ice cooled cake and put pecans on top....enjoy!!!

Is almond flour the same as the meal?

I am not sure but you can make meal like flour in processor!
