I Need To Fix Something Simple Yet Tasty

I am no cook, but I know that "Shepherd's pie" is fast and easy. Of course, that's made with ground beef and not chicken. I'm sure you can Google for a recipe and if not, I can see if Mrs. Musky has one.

chicken burritos or soft taco's, grilled chicken salad, oven baked chicken breaded in panko baked on a rack in the pan so it's crispy all over with green beans with bacon and onions, cooked chicken over rice with peas/or broccoli and cream of (mushroom, chicken, celery) soup topped with lo-fat cheese, baked till bubbly.

A little late but stroganoff is fast and easy. Cook chicken w garlic and onions and favorite other seasoning. Add one can cream of mushroom, one can cream of brocolli, sour cream couple good size spoonfuls and bbq sauce to taste. Egg Noodles always a good but not necessary option

Thank you for posting your replies.  I will have to try all of these!  Unfortunately, the tornado alerts and the presence of the storm chasers in our parking lot for the second day in a row, prevented me from going home to try in of these.  But there has to be some days in the near future without storms!

 

Chuck--I am going to try that shepherds pie with ground chicken!  Just attach the grinder to the ole Kitchen Aide and "walla, ground chicken!"

Here is a dish you may like to make. It's a summer dish ...

 

take 2 medium size zucchini's peal some of the skin off (if you prefer), take one of the zucchini and cut it up into 4 small thin sclices (not like potatoe chip slices), put them in a separate dish, get a frying pan out 9 inche size, add 1/4 cup of pure extra virgin olive oil, cut up a small onion, slice the onion into the pan with the olive oil, keep at medium cooking heat or really low medicum, let the onion get light brown, take your zucchini that you sliced up and put into the pan.  Stir all and cover the pan up.  Add 1/2 teaspoon of sugar (natural or junky store brand white) in with the cooking Zucchini.    Zucchini make their own water, keep an eye on them that they don't burn or run low of their natural water.  In another small bowl, take 2 eggs, add white with yellow yoke in bowl, take 2 handfuls of parmesan cheese (grated smooth) add to the eggs, and whip them up.  When your zucchini are looking somewhat cooked (not mushy) pour the egg/with cheese on top, stir it all together, flatten it out after you have stired in the egg/with cheese).    While one side is turning a light golden brown, (this takes practice), take a large flat plate, add water to it, take a kitchen towel (clothe) and while its cooking on the stove, remove the pan and put the wet dish on top, it must be just a small size more then the pan.  Here it comes, the trick.... flip the one side onto the dish, and then slide the other uncooked side back into the pan.  When that side is done, shut off stove top, remove pan, do the same with the dish (clean off any remaining parts from first flip) wet the dish (not soak it) and put over the pan, and flip it.  Then your done!  Do not add salt.    Hope this give you some ideas, this is an Italian summer omelet kinda dish.    If you have any left, you can put in frig!  Heats up nicely the next day in micro wave.
