Has anyone tried using a conference microphone like this one for their midweek meeting demonstrations? We were looking at getting a couple new microphones for demonstrations and I was wondering if something like this would provide better audio for two people speaking and being able to move around a little bit

Most KH in Canada uses a similar microphone setup as far as I know when I visited several congregations.

But you will have to talk with your LDC for the right recommendation.

We used one years ago, but discontinued it use after realizing that many blocked the microphone with their materials

If they have a book or note papers or even an iPad that they sat in front of their view, it blocked the microphone which was sitting in the middle of the table

It also had some issues when one spoke loudly, and the other one spoke softly we struggled with having a single table mic instead of two separate mics that could be adjusted independently based on their positioning and the speakers volume

Thank you for the info, I was worried about that, I was considering using one for the standing demos. We have a pair of Shure CVG18DRS-B/C 18" Centraverse Gooseneck for the table. I just wondered if two standing would be easier so when they move to share a scripture or something they don’t leave the pickup area of a standard mic. But with the levels issue between speakers it might not be the proper application for it.

This is one of the reasons stage, TV and the movies use mics that are held or hung from above ... not really a practical solution for a KH.

Yes, we tried that exact microphone for over a year. Our experience was exactly what Darin S described: Once someone sets up their tablet, it substantially reduces the sound to the microphone in the center of the table. We changed to the gooseneck type with much better performance. It can be positioned for each person, and each has its own channel, so volume can be set individually. Definitely the way to go!
