We have a similar product - our sweet potato is called Kumera - so we have Kumera Chips here. Fry at a high heat because if the oil penetrates into the chip they become soggy.  I par boil mine before a quick fry so they don't have to stay in the oil for too long.

There is a frozen, bake product that tries to be this, fails miserably. 

 

We both like sweet potato fries, usually when we are out one of us will get regular fries, the other one gets the sweet ones; we share :wub:

We just had dinner at a Ruby's Diner and I upgraded the fries to sweet potato fries. I asked for a dipping sauce and the waitress offered BBQ,  honey mustard,  ranch, 1000 Island,  so, in my usual decisive manner I said yes. So she brought a tray of all four.

I have found in other restaurants that some of their sandwich sauces such as a chili aiolI are pretty good dipping sauces for sweet tater frys, you just gotta ask for it...

Love them, but I confess that I bake mine since I've cut down on fried foods for health reasons.  I take a large sweet potato, cut it up in strips (or wedges). Then I cover them with a little coconut oil; add spices (i.e., salt, pepper, paprika, cayenne, etc.) then bake for 20-25 minutes til brown. Crispy?..no but it's good with homemade hamburger an avocado sandwich. :D

Just had sweet potato fries at Karl Strauss microbrewery in Carlsbad, I asked for some chili aioli, it paired very well with their Red Trolley Ale...
