Anybody eat 'chittlins'?

Or "Chitterlings" - as it is properly named .... though "Chitlins" is common for the way it is pronounced.

 

Chitterlings  sometimes spelled/pronounced chitlins or chittlins) are usually the small intestines of a pig, although the intestines of cattle and other animals are sometimes so named when used as a foodstuff

I thought I could try anything that anyone else would eat.

Chittlins were my failure.

Had some friends that loved chittlins.

They cooked some up for a congregation get together. 

The chittlins smelled so bad cooking that only the two sisters from the deep south ate any.

From the smell my wife and I concluded that this was a case where S & C were switched in early translation.

 I am not sying I am Superman, I am only saying that nobody has ever seen Superman  and me in a room together.

My. Wife and I are planning aholiday next spring in Lyon and Avignon in France, and a speciality. Of Lyonnaise cuisine is andouillette, which is roughly the same as chitterlings sausage. Made from pigs intestines and pigs colon.

I heard they were a feature of southern cookery in the USA, and wondered about them.

My. Wife and I are planning aholiday next spring in Lyon and Avignon in France, and a speciality. Of Lyonnaise cuisine is andouillette, which is roughly the same as chitterlings sausage. Made from pigs intestines and pigs colon.

Chitterlings can mean a sausage.

 

In the US 'chittlins' are not sausage, just pig intestines, washed, boiled and some times fried after boiling.

 

Here is what Wikipedia has to say:

"In the United States, chitterlings are part of the African American and Southern culinary tradition commonly called "soul food."

Chitterlings are carefully cleaned and rinsed several times before they are boiled or stewed for several hours. A common practice is to place a halved onion in the pot to mitigate what many regard as a very unpleasant odor that can be particularly strong when the chitterlings begin to cook. ."

To me the odor it is as similar to  a port-a-potty on a busy summer day.

Like limburger cheese, it may be delicious but I failed get it past my nose.

I don't but I will always think about a well loved former CO/DO who I would never in a million years think would utter the words, "We love them."  They came to our house and enjoyed the prepared dish many times while in our circuit.

My Mom said her Mom, my Grammy would feed the chitterlins to the pigs themselves to fattening them up!

 Glad you mentioned that, first thing that came to my mind. ( never have had chitlins )

Limburger was a big tradition in my wife's family, her dad would break it out whenever we visited. I tried, I really tried, couldn't do it.

Now I can do a lot of stinky cheese, sopressata sausage, etc, but no Limburger for me. i would give chitlins at least a try. I had my friend Satch horse laugh me out of town when I asked him what a chitterling was. chitlin ! chitlin ! Saw it on a sign at a meat market.

In the restaurant attached to our guest house in Villeneuve Lez Avignon I had anduillette - pigs intestine sausage - and it was delicious!

In Avignon I ate CUISSES DE GRENOUILLE:

Snails in Lyon, and Charolais beef tartare twice! What a gourmet's delight is Provence.

Chitlins, Grits and Colored Greens. The Holy Trinity of Southern Food. I've tried each and you can keep them all.

The question for me is how they became so popular ? That is the real mystery.

Not a fan of Grits... unless I can cover them in syrup otherwise they taste like a bowl full of gritty nothingness.
