I made my first bread!!!!

Congrats - that bread looks great!

 

I have been making bread and pizza dough for about 65 years. I used to work at a pizza place where I made two different kinds 5 days a week.

 

That is an interesting recipe - I will have to give it a try ... soon 🙂

 

Fresh bread is nice!

My first home made experience was pizza. That was fun to make. Had to grab the photos off my IG because it would take too long to find ob my phone due to how long it has been lol🤣

 

I had a goal to make a pizzaria x retro arcade thing, but that idea kinda died out. That would require so much starting money

Thanks for sharing. I too love making pizza, my husband s grandmother, who came right from Italy when she was only 15, taught me know to make pizza and pasta many years ago  She said if you have flour, you can feed your family in hard times.  Her love and recipe has keep my family very happy for over 50 years. I will be trying your recipe.

My wife is still in the experimenting phase of making bread. Since it has to be gluten-free, there’s a lot of room for creativity and adjustments. No two loaves have turned out the same yet! She’s been at it for about eight months, though sometimes it feels like it’s been much longer.

A few months ago I experimented making GF sourdough bread.  I make regular sourdough at least once a month.  GF was a whole new level.  Nothing like regular sourdough.  Anyways gave it up as my GF starter “died” and I could not “resurrect” it.  A couple of weeks ago I made GF bread using yeast and was very happy with it.  I specifically made it for Pioneer School lunch.  They loved it.  Gratefully I am not gluten intolerant or coeliac but I have many friends that are so I like to cater for them.

I almost forgot to take pics ... this is dough I made Tuesday. I used some then but put the rest in the fridge. I took it out today and let it warm up and rise. I made this pizza in an iron skillet and cooked it at 400F for 30 minutes. It came out really nice.

I put the iron skillet in the oven at 400F ...

 

You can also use an iron skillet in a BBQ grill to work like an oven

When you put your leftover dough in the refrigerator, do you just wrap it in plastic or what do you do? Never tried keeping the dough that way   I usually par bake it and then put in freezer to make later

You can put it in a plastic bag, a zip-lock or even a bread bag with the tail tucked under, making sure you have de-gassed it before placing in the bag. You can also use a container with a lid if you make sure the container is large enough to allow for some rising. If you wrap it in plastic wrap, make sure you leave it loose enough to allow for rising.

 

Make sure the dough is cooled off or, if it is still warm, put it in a bowl uncovered until it cools down then put it in a bag or add a cover. If you put it in warm it will get quite wet while it cools and stick to the container and cause the surface to be less desirable. If you don't cover it at all, it will dry out.

 

Much of the NY style pizza dough uses a 48-72 hour fermentation in the fridge.

Thanks Bro John for that info, I will be trying it.  Im also ready to make homemade lasagna noodles . A dear sister and friend is having her 60th anniversary amd she ask for lasagna, so I thought I’ld make it extra special with fresh noodles instead of the box.  Hope it turns out good.

I make fresh pasta all the time its easy.  I do the mix in my food processor and it only takes a few minutes.  I used to have a hand pasta roller but now I have an electric one so it is super easy to roll.  Once you try it you will never buy dry again especially lasagne as the sheets are real easy to roll and unlike dry sheets you do not need to pre-cook the fresh.

Linda. I stat\rted making fresh pasta in the 70s and never have brought the box since but I just never made the lasagna noodles, dont know why, guess mainly because my family really like just pasta 🤣 But I decided to do this for my special friend for her anniversary. Im making a trial batch today, just to be sure

So you are an old hand.  The sheets of lasagne are ready faster than the spaghetti.  😎🍝
