I've made meatloaf for years and it's ok. I'm not into pre-packaged seasonings so I'd just add my own. Still it was just ok. I found this recipe a little bit ago and made it once, made it into balls that fit in my muffin tin for Lew's lunches. He would text me at how good it was. I hadn't tried it and just thought good, I made him happy. Well I made it again today. 2 of the meatloaf balls fell apart as I took them out so I ate them. Oh My Goodness! They are incredible. This is the best recipe I've ever had.  Oh wow, I hope you folks try it, it's so worth it.

Side note- I've recently discovered how much I love dry mustard.

MOM'S FAMOUS MEATLOAF!!!!!
Ingredients
Meatloaf
  • 1 or 1½ pound ground beef and pork combo. (I use 1 1/2 pound ground chuck)
  • ¾c. diced red onion  (I use yellow sweet)
  • 1/2 c. diced celery
  • 3 eggs
  • 1/3 c. soy sauce (I use liquid aminos)
  • 1/2 c. ketchup
  • 1T. dried oregano
  • 1T. chopped parsley ( I'm not fond of this in my food)
  • 2 tsp. garlic powder (I use chopped garlic)
  • sprinkle black pepper
  • 1 1/4c. quick oats
  • 1/2c. light brown sugar
  • 1/3c. ketchup
  • 3 1/2 T. stone ground mustard
  • ½ tsp. paprinka (I can't use this)
  • ½ tsp. pepper
 
Instructions
  1. Preheat oven 350.  Bake in a round pyrex dish or in nonstick mini loaf pan. Mix all  ingredients together and place in pan.  Bake until it reaches 160 degrees.  (One loaf pan is about 75-85 mins.  Check mini loaves earlier)

I have never used a pre-package seasoning - I always just season it myself

 

Just curious ... why is ketchup listed twice?

Because the last 5 ingredients were to be mixed together separately and spread across the top. Since I was making little cupcake size I just put everything inside. And it's amazing.

This is similar to mine with a few differences

 

I add 1/2c parmesan

1/2c grated carrot

 

I use breadcrumbs instead of oats.

 

And 1/2 tsp of sage (trust me...it works)

 

 

I love dry mustard!!!

My wife likes the easy route for meatloaf.

2 pounds lean ground beef

2 eggs

1 package soda crackers ( 4 oz )

1 Onion soup mix.

1/4 c Ketchup in the mix.

 

Combine all ingredients in large bowl.

 

Put into greased/sprayed loaf pan - metal or glass.

 

Spread ketchup over top - we like lots.

 

Bake at 350 for at least 1 to 1/2 hours until internal temp reaches 175

 

Enjoy.

 

Sometime I like hot sauce - Tabasco works really well. Mix into mashed potatoes if you want. :eat:

 

Made one the other day - didn't have onion soup mix but did have garlic & herb.

Added 1/2 pack and some dried onion flakes.

Put it into large freezer bag then put into loaf pan.

Froze it since it was Hot that day and didn't want to turn on the oven.

 

Will try baking it in conv/micro combo today.  Have to look up how to do it. :praying:

Mmmmm! Thanks for these luscious sounding recipes. Several years ago I planted a peach tree so I'm off my keto until the last peach. How can I resist those!  Also we have a brand new stove so good timing. Did you know the cleaning cycle can burn out a stove's electronics? Me either. Been without for a couple years. 

My mother used to add about a half can of Campbell's alphabet vegetable soup to her mix. It was better than it sounds.

Correction

In looking up online, temps- some are as low as 150 more at 160 -which can still leave a bit of pink.

 

In meatloaf - my wife likes it a bit more well done. I should have said 165 to170 Not 175.

 

My wife also likes beef/pork blend at times. 60/40
