I wanted to bake a cake last week, but there were no eggs in the supermarkets around where I live (food shortages prophecy in miniature). So, I googled it and thankfully there is a vegetarian equivalent so I could still make it. Win-win!

 

And then I opened the fridge to get the ingredients and there was a carton of eggs 😳. I made the original recipe 😝

BTW, the cake was for a sister who was joining me for letter writing, who wasn’t vegan, or lactose intolerant, or had a wheat allergy, or gluten intolerant. Just recovering from open heart surgery and 2 bouts of covid. Cake turned out edible too 🤣🤣
