It depends on the carbs, yes refined carbs are to be avoided but millet grain for example is wonderful!

I did such damage to my hormonal balance that I gain weight if I eat fruit! Carbs - in any form - are no good for me. Just another stupid thing that God's Kingdom will reverse.

Aww bro.  How did that happen?  Most things can be improved - it's just knowing how.  Metabolism can definitely be improved.

 

There are good carbs and they are important, millet, brown rice is really good for health.  For example - a half-cup serving of brown rice contains 1.7 grams of Resistant Starch, a healthy carb that boosts metabolism and burns fat. Plus, brown rice is a low-energy-density food, meaning it's heavy and filling but low in calories.

You're absolutely right on all points. Actually the best way I've found to right the hormonal imbalance is retraining the insulin response. That means keto. A year of strict keto and I should be able to introduce some carbs again. For some, though, like the people who drink Pepsi until they go blind, may have to stay on keto for life to keep the weight off.

A sister that I used to be in the same Congregation with started having health issues. She had "odd" symptoms that seemed to be related to when she ate. She underwent some testing and they discovered she had serious imbalances with her digestion when she ate. She had to change her diet.

 

She had to cut out some of the foods she really liked and others did not phase her so much. I do not remember all the foods she had to quit eating but, in connection with this thread, a few of the foods that were causing her problems:

  • Rice - including brown rice
  • Whole grains
  • Various beans and lentils
  • Several raw vegetables
  • Some fruits and nuts

Some foods she could still eat included:

  • Potatoes - baked or fried
  • Some breads WITH gluten
  • Most cooked vegetables
  • Some nuts and fruit

I saw her recently at our CA and she said she is "fine now" as long as she stays on her diet. She is used to eating the way she does now and does not find it "restricting" like she did while they were figuring out what she could and couldn't eat.

 

BTW - meat was never taken off her diet - seems her body needs to get it's protein from this source since many of the other sources are off the table.

I heard there was a new all vegan soul food restaurant in Grand Prairie, which is about 15 minutes from where I live. I was in the area so I looked it up on my GPS and it’s close, about 12 minutes from my house. I went inside just to check the place out and I liked it. I will go there probably next month and will give my opinion on it. There’s also an all vegan Mexican restaurant in Dallas that I want to try. It’s good to switch things up a little.

I was merely mentioning millet and brown rice because they support blood sugar - the context was diabetes.

I have no idea if that sister has any problems with her blood sugar - so, it doesn't really matter if brown rice has an impact on blood sugar, since she cannot eat it

I have made adjustments to my diet in keeping with my health issues ... however, I do not (and will not) try to tell or convince others that they should eat the same way I do because "it is a healthier way to eat" - it may be healthier for ME ... that does not mean it will be healthier for YOU.

I can vouch for this in my experience with adrenal and hormonal issues. When you're in ketosis, which can be likened to a state of high endurance and efficiency (as opposed to a high performance burst state with glycolysis), your hormone production and metabolism can slow down over time. This actually seems to be beneficial for people with issues like autoimmune thyroid by allowing your body to make more efficient use of impaired levels of hormones, giving the organ some time to heal and rest. Traditionally, many cultures would bulk up on carbohydrates harvested during the summer and fall months to gain weight and then eat more meat and fats in the winter, burning off the weight over the winter months - I think there's definitely something to that natural cycle. I was strict Keto for between 1-2 years and was feeling the best I ever have in my life, but then I eventually noticed I started flagging a bit and craving carbs again so I listened to my body and began cycling Keto with 1-2 carb days per week. This works fairly well for me overall, though I'm having some issues creep in once again that generic blood tests have not indicated the cause and I can't figure out how to get proper testing done. It may simply be that I'm not pushing myself to get out or exercise anymore, not allowing myself to properly cycle energy or interact with nature. I don't get tired or sleep well. Complacency and laziness...

Rice (along with most grains) is definitely an issue for me too, despite my former love for sushi. Ugh, now I'm tempted to try some again. :< I think I did attempt it again once, a year or so ago, and still got the following results. When I was getting off of processed food and learning to cook my own food, I would often steam many kinds of rice... only to quickly end up with horribly itching intestines, the sensation of something crawling out of my guts and spreading through my extremities like a parasite, resulting in stabbing hives growing out of my skin from head to toe. Makes relaxing or sleeping nigh impossible when you're covered in itchy red hot pain. I'm not quite sure how one should design a proper vegan diet without grain or pseudo grains, let alone autoimmune and low fodmaps and LCHF.

Yesterday I went back to the vegan restaurant in Dallas and had breakfast. I had pancakes and scrambled tofu eggs. The pancakes were good but the tofu eggs were awful. I Don’t know why I chose to get a 5 stack of pancakes because I should have known I wasn’t going to be able to finish them. I also got a cinnamon roll to go. It was really good. I really went there to try one of their monthly specials, the Paul Reuben sandwich, but forgot I wouldn’t be able to because it was still morning. I will go back on the last day of the month and let you guys know how it was :)

I decided to give up canned fruit because they have destroyed enzymes due to the cooking process. I used to eat a ton of it, particularly canned pineapple, peaches and pears. Now I’d rather eat these foods from a whole food source. I had a pineapple for breakfast, 3 bananas and a avocado for lunch and a banana, an avocado and cantaloupe for dinner along with some ground flax seed. I haven’t eaten 3 meals since I’ve been mostly raw but I was hungry today.

I was back in Dallas yesterday so I stopped back by Spiral Diner and had their “Paul Reuben.” It was ok. I didn’t have time to eat desert so I came back after I ran some errands and had their peanut butter ice cream with a hot brownie. The ice cream was some of the best I’ve had. Spiral diner’s ice cream tastes nothing like the typical vegan ice cream. It tastes just like regular ice cream... and their brownies :eat:

I went back to Spiral Diner last week because it was around the corner from Da Munchies and the lady at Da Munchies said they couldn’t serve me anything but vegan hotdogs because the gas lines were being worked on. So I went around the corner to Spiral Diner and had the “ate layer burrito” with Mac n cheese and chocolate ice cream with a hot brownie for desert. I really enjoyed it :eat:

The next day I went back to Dallas to go to Da munchies again. I had the “Big Mac n’ cheese buffalo chick’ em sammich.” It was really good. I wanted to get all the fast food eating out of my system because I’m about to go raw for like 1 1/2 or 2 months before I eat out once a week again to lose the rest of my weight. I’m currently 191 lbs (86 kilograms). I’ll keep you guys posted.

Here’s something I had some time ago. It’s a veggie footlong from Subway. It consists of Italian bread, spinach, lettuce, tomatoes, black olives, pickles and sweet onion sauce. The chips I have are Doritos sweet spicy chili. They are really good. I used to eat the cool ranch and nacho cheese Doritos but I no longer do because they aren’t vegan.

I’ve lost 6 lbs (2.7 kg) in just 2 days going raw 😁 I now weigh 185 lbs. I’ll keep you guys updated.

Here’s a guacamole bowl I like to get from Taco Cabana. It has guacamole, borracho beans, black beans, retried beans, lettuce, rice and pico de gallo. It’s so good. I like Taco Cabana’s bowls better than the ones at Chipotle. At least it has a shell you can eat. I later found out that the retried beans are made from animal fat but it’s so good I don’t care. Their black bean soft tacos are good too.

Wow, avocado is nice. I see strawberries and lettuce. Good for you, Brother Jack eating vegetables with your fruits. Loved the spaghetti too.  Be careful about the dressing. Olive oil I believe. High fat cream would be nice but bad for one with high cholesterol like me. Do you make the salad as you go or do you follow a recipe? I like balsamic vinegar with toasted bread.

I like som tam (Thai green papaya salad) with pickled small black crabs. Crazy spicy the one I ate in Bangkok.
